Quick Seafood Laksa
RECIPE
This is an all-time favourite recipe, it’s full of flavour and really doesn’t take that long! Just make sure to prep all of your ingredients first! You can also substitute the seafood for chicken thighs or puffed tofu.
INGREDIENTS
2 heaped tbsp laksa paste (my fav is this one you can pick up from Asian grocery stores)
1 tsp minced ginger
1 tsp minced garlic
400ml coconut milk (good quality)
1L chicken stock
1 tsp fish sauce
1 small broccoli head chopped up
1 carrot thickly sliced
1 zucchini thickly sliced
2 fillets of fish, chopped into 1cm pieces (we used barramundi)
big handful of prawns (peeled)
Vermicelli noodles
TO SERVE
Lime
Fried Shallots
METHOD
Add laksa paste, ginger and garlic to a pot and stir until fragrant on a low heat
Add coconut milk, chicken stock, fish sauce and vegetables - turn the heat up a little
Cook noodles per instructions
Drop fish & prawns into laksa
Divide noodles into bowls, ladle over laksa, squeeze lime over the top and sprinkle fried shallots
