Butter and Garlic Mushrooms
RECIPE
We felt like treating ourselves… and what’s more indulgent than butter? A really simple but seriously delicious breakfast that will leave a yummy taste in your mouth all day long!
METHOD
Heat a big knob of butter in a frying pan, add mushrooms, zucchini, kale, minced garlic and herbs (I used thyme, parsley and basil from the garden)- stir around and pop the lid on.
In another little frying pan poach some eggs.
Transfer the vegetables to a plate once soft and browned. Top with the poached eggs, crack salt and pepper and grate parmesan cheese over the top!
Savour every mouthful.
