Healthy Vegetable Frittata
RECIPE
This is a breakfast we whipped up one morning using up the leftover veggies we had from the market. You could substitute the vegetables for any you have in the fridge. The potato hash is absolutely delicious and we were surprised at how easy they were to make - we imagine they’d be a huge hit with kids!
METHOD
Dice up potatoes small and cook in a frying pan until cooked through.
Switch out the potatoes for the zucchini, add the kale towards the end and cook until soft.
Whisk eggs in a bowl, add the potatoes, zucchini, kale, goats cheese, salt and pepper - mix together.
Bake in the oven until the eggs are cooked and edges are golden brown.
Top with micro greens and serve with chutney or relish.
