Breakfast Beans
RECIPE
An experiment that turned out pretty good! We were inspired by cans of beans and a pasta sauce we found in the pantry and used up all of our leftover vegetables. This would be great for breakfast, lunch or dinner and you could probably just use whatever you have laying around.
METHOD
Sauté diced onion and celery till soft. Add the garlic, chilli zucchini and capsicum
Add the beans, sauce, thyme and paprika - pop a lit on and simmer till the vegetables are just soft.
Toast ciabatta (we cut ours quite thick and toasted it under the grill - it was delicious).
Top your ciabatta with bean mix, goats cheese, parsley and a poached egg. Enjoy!
You could also totally eat this with rice for dinner…
