Maple Syrup Brussel Sprouts on Toast
RECIPE
Ok - stay with me here. One of our absolute favourite side dishes is maple syrup roasted brussel sprouts - we eat them for dinner, lunch and now also for breakfast. Not surprisingly these translated beautifully to a morning treat!
METHOD
Pre-heat the oven
Trim off the stalky end of your sprouts and cut in half, place them in a baking dish - coat with olive oil, salt and pepper - roast until crispy and a little charred
Poach eggs & toast bread
Pull out your brussel sprouts and drizzle maple syrup all over them (I like to be generous here)
Butter your toast and stack everything on top
Enjoy!
