Smashed Dukkah Pumpkin
RECIPE
This recipe is inspired by one of my favourite breakfasts from a cafe called Caffiend in Cairns - every time I travel home I visit and order this breakfast. I’ve made it up from my memory and I think our rendition was pretty successful!
METHOD
Dice pumpkin up into small cubes, place in a roasting dish with some whole cloves of garlic, coat in olive oil, season with nutmeg, salt and pepper. Roast until soft, then mash with a little bit of butter.
Toast ciabatta in the toaster.
Top ciabatta with pumpkin mash and goats cheese, pop under the grill.
Top with Dukkah, pomegranate, fresh mint, salt and pepper.
We had ours with soft poached eggs which was lovely.
