POTATO HASH WITH DUKKAH POACHED EGGS
RECIPE
This is a breakfast we whipped up one morning using up the leftover veggies we had from the market. You could substitute the vegetables for any you have in the fridge. The potato hash is absolutely delicious and we were surprised at how easy they were to make - we imagine they’d be a huge hit with kids!
METHOD
Grate potatoes and squeeze excess liquid. Add salt to your mix, divide into small portions and flatten. In a hot pan fry up in oil until crispy and browned.
Sauté zucchini and squash until cooked.
Poach Eggs
Lay your potato hash on a plate, top with cooked vegetables, poached eggs, dukkah, radishes, herbs, goats cheese and chilli if you like.
