Herb Fritters with Zesty Yoghurt

RECIPE

After a quick morning coffee with our neighbour Marissa up at Freshwater Creek Cottages we were sent home with a tray of eggs from their chooks and a pile of beautiful herbs from their veggie garden. It only felt right to whip up some delicious fritters with a zesty yoghurt.

 

INGREDIENTS

1 CUP FRESG HERBS

8 EGGS

PINCH OF CUMIN

1/2 CUP BREADCRUMBS

SALT AND PEPPER

GREEK YOHURT

LEMON

MINT

METHOD

  1. Blitz a slice of good quality bread in a food processor to make bread crumbs (we used sourdough)

  2. Finely shop a selection of herbs (We used chives, basil, parsley and mint however you could use really any fresh herbs)

  3. Add herbs, breadcrumbs, cumin and eggs to a bowl and mix

  4. Heat up olive oil In a large frying pan, spoon egg mixture and cook in small batches

  5. Serve with greek yogurt mixed lemon and mint
